The first known crackers were made in 1792 in Newburyport, Massachusetts. Baker John Pearson combined flour and water, and the resulting cracker-like snack was known as “pilot bread” or “sea biscuits.” This food had a long shelf life, and sailors took the crackers on boats for sustenance on their long journeys. Sea biscuits were not big on flavor.
In 1801, Josiah Bent (another Massachusetts baker) was making hardtack, but it burned, making a crackling noise: hence, the name crackers. Less than a decade later, Bent was making a decent profit. He eventually sold his business to the Nabisco company, and the rest was history.
